Lettuce Wraps

I don't know about you but easy and healthy are at the top of my cooking list these days. Here is an easy lettuce wrap meal.


Start with this mix the recipe is on the back and its yummo.


Add spices and water.


Soy sauce.



Mid until blended.


Add your meat of preference we do very lean ground chicken. This is also where I would normally add in chopped green onion and chestnuts. But the hubs wanted it plain. I like the crunch.


Mix good and let chill for 20 min or overnight.


Sautée over medium heat.


Let simmer until dry and not runny, stir rarely. 



Chop lettuce towards its booty and then pull out layers for your wraps.


Spoon in chicken goodness.


Serve with edamame and a smile :)

Summer Ceviche

In the summertime we eat pretty light. I even prefer not to turn on the oven so things like chicken salad, tuna salad, lettuce wraps and ceviche are staples.

So here's the Ceviche so easy and really good! 


First put your apron on.


Cast of characters ...I use tilapia but any fish you like will do. Roma tomatoes, cilantro, onion, pepper, Lawry's salt, Italian seasoning and I use a Hawaiian spice my sister in law gave us. Really any seasoning you like will work.


Season up your fish to your liking tilapia is pretty bland so I season it up real nice. I also only use 3 filets and save the fourth for the hubs lunch.


Put the fish in the oven for about 10 min on 350.


While the fish cooks chop your veggies...


Wash 


I use four Roma tomatoes and I squeeze the juicy party out because I don't want it too mushy.


Chop




Chop all the tomatoes, one whole white onion, cilantro (about 1/4 cup) or more if you love it, like us and one jalapeño. Mix them all together. Them chill it until the fish is ready.


 Pull the fish out and let it cool.


Once cool chop it up


Mix into your veggie mix


Squeeze a whole lime


Let it chill for at least 30 min


Serve with chips of your choice, extra lime and you favorite summertime beverage. These chips are Benos, they are black bean chips very few ingredients and low carb. I also like mine with plain keep it real crackers ...that's right Lorena! But anything, tortillas, tortilla chips it's alllll good!

Jalapeño Basil Porkchops

During the summer we pretty much decide what we are going to eat with one question..."can we grill it?" So here is an easy one for the grill.

First get you basil


We keep some in the back


Pull the leaves off


Put your ring on your ring holder...mine is a cute bird my mom got me.


Wash


Lay out and pay dry



Chop it up...this is my favorite little chopper buddy I use it all the time and it is perfection and easy to clean!


Next is the spicyness it comes from the jalapeño jelly.


It's good stuff 


Thick perfect for marinade 


Low fat and low call...bonus!


Throw in your basil



Mix it up good then heat



Next season up the chops we like Lawry's and pepper.


Smother those babies in your marinade and let sit in the fridge for 20 mins or so.


Place on the grill...or if you are like me have some hot guy do it for you.



Slather them a little more then cool for 15 min and flip.



Sit back and look over the freshly cut yard while you wait for them to be done just another 15 min.


Wa-la yummyness!


I have mine with brussels sprouts  seasoned with sea salt and pepper sooo good but I know not everyone likes them including Super Man so he has his with other veggies and some potatoes.



Pork chops are very lean and low fat we have them a lot...It's a good week night meal and we have lunch for tomorrow.
